Spring

There’s no season more evocative in the Eternal City than spring. The city awakens in bloom, inviting you to slow down and savor la dolce vita with wisteria walks, fresh flavors, and open- air performances.

Spring’s arrival is signaled by Carciofi alla Romana—tender artichokes braised with garlic and mint, best savored in the Jewish Ghetto or at our Da Mariolino. For a short window in April, don’t miss vignarola, a rustic stew of fava beans, peas, artichokes, and pancetta. Indulge in paccheri with prawns and spring artichokes, or try fragoline di Nemi, tiny wild strawberries from volcanic hills, served at Emme with vanilla gelato.
